Back It Up: A Cautionary Tale

My laptop. When I think about losing it I want to sing “How can I live without you” in my best Faith Hill voice. It is my friend. My confidant. My keeper of all things precious.

Why then, did I not back it up? Why did I let that pack of CDs sit on my desk for a month without transferring my pictures onto them? Why didn’t we buy that external hard drive?

Why, God, why?!

I woke up yesterday to a laptop that had given up. The black screen of death. And when we really tried to get it to turn on? A screen full of words and garblygook. Yes. That’s a word. I’m distraught. Leave me alone.

So here I am. No laptop. I’ve been assured that there are geek type people who can fix it or at the very least, get my pictures off it. For a very reasonable price, I’m sure. Eye roll.

But that’s what I get. And so today I encourage you…

BACK IT UP. BACK IT ALLLLLL UP.

I wish I was sharing a fun new rap I made up with you. That would have been much more fun.

Until I get it fixed, there may be limited stuff happening here. Which is too bad because I have a giveaway lined up! But don’t worry. Our old faithful dinosaur desk top is still going and I just figured out how to blog from my phone.

Technology!

I hope my back it up rap song gets stuck in your head all day. That would make me feel better.

Recipe: Caramel Carrot Cake

A last minute dinner with friends left me looking for a quick and easy dessert last week. I happened to have a couple of cake mixes on hand thanks to a recent sale so that was my easy fix. I had a carrot cake mix and a can of cream cheese frosting. I know, I know, a cake mix AND canned frosting. It’s like I don’t even know the name of my own blog.

Anyway, looking for a way to spruce the plain cake mix up, I found this recipe from Betty Crocker for Caramel Carrot Cake. I was pleasantly surprised how nicely it turned out considering it wasn’t homemade! I did things just a teeny bit differently than they did…

Caramel Carrot Cake

Ingredients:

1 box carrot cake mix
1 cup water
1/2 cup butter, melted
3 eggs
1 jar caramel topping
1 container cream cheese frosting
 
Heat oven to 350 degrees. Grease or spray pan. (The BC recipe has you make it as a 9×13 cake, I made mine in two circle cake pans so I could stack them all pretty-like.) 
 
Mix together the cake mix, water, butter and eggs. Pour into pan(s).
Bake for about 30 minutes or until a toothpick comes out clean.
Cool. The BC recipe has quite a few steps listed at this point. I just poked a few holes in the cakes, covered each layer in caramel, stacked them on top of each other and covered in frosting. Easy! I think next time I will put some frosting in between the middle layer as well.
 

This is just luscious with a hot cup of coffee!

My Kids Are Funnier Than Your Kids

Just a few examples of why my kids are funnier than yours.

Me: Charlie, please help clean the playroom.
Charlie: But I didn’t play with any of this.
Me: Well I didn’t wear any of your clothes but I’m still washing them for you.
Charlie: I don’t get the point.
Me: SIGH

Me: Chandler, you have chocolate on your face.
Chandler: Yeah, I know, I’m saving it in case I want a snack later.
PS – He was kind of serious.

Chase: Indians don’t exist.
Chandler: Yes they do!
Charlie: If Indians exist, then Cowboys exist too!
Chandler: Guys, listen, North America was discovered by the white people…I mean….certain people.(So politically correct, that one.) The Indians knew it was here first, they just didn’t tell anyone, then we found it.  I’m in third grade, I’ve been going to school for five years now so I know a lot more than you.

Chandler: Mom this dinner isn’t good…it’s awesome!
Charlie: Yeah, Mom super yummy.
Chase: Well, it’s not dog food.

(Talking about what they will be when they grow up)
Chandler: I would not want to be a guy who tests dangerous things that can explode stuff.
Chase: Yeah, like yourself.

Me: Chase, will you live with me forever and ever?
Chase: Only until I’m big enough to get my own house.
Me: No, I want you to stay with me forever!
Chase: No way! That means I would have to do the dishwasher for the rest of my life!

Recipe: Spinach and Parmesan Stuffed Chicken

This is one of my go-to meals to prepare when we are having company over for dinner. It’s not too complicated or time consuming, it looks like it was, and it tastes so dang good.

Spinach and Parmesan Stuffed Chicken

Ingredients:
4 oz cream cheese, softened
1 cup fresh baby spinach, chopped (more if you are a big fan like I am!)
1 cup shredded mozzarella cheese
6 Tbsp grated Parmesan cheese
6 small boneless chicken breast halves
1 egg
1/2 cup bread crumbs

Preheat oven to 375 degrees. Mix cream cheese, spinach,  mozzarella cheese and half of the Parmesan cheese until well blended. Spread evenly onto chicken breasts. (If your chicken breasts are thick, you may want to flatten them out a bit by pounding them or fileting them open just a tiny bit.)

Roll the chicken up tightly. Secure with wooden toothpicks to hold them together.

Beat the egg in a bowl. Mix the remaining Parmesan cheese and all of the bread crumbs in a separate bowl. Dip chicken in the egg, then roll in the breadcrumbs. Place seam side down in a 13×9 baking dish that has been sprayed with cooking spray.

Bake for about 30 minutes or until chicken is cooked through. Remove toothpicks before eating!

This is perfect served with pasta covered in homemade Alfredo sauce and homemade French bread!

End Piracy, Not Liberty. Stop SOPA.

So you’ve probably noticed that Google, Wikipedia, Craigslist and many others are protesting against SOPA (Stop Online Piracy Act) and PIPA (Protect IP Act). I know quite a few bloggers are also shutting down their blogs in protest as well. I won’t be doing that (mostly because I don’t know how. Ahem.) but I did want to make sure I posted some info on it.

I am not an expert on what is happening, but I encourage you to look it up, check it out and do something about it. What I do know is that this could affect bloggers like myself in a very
negative way. It could affect all of us and the way we use the internet.
I know that I risk people stealing my ideas, my recipes and my content
in general by posting it on the internet for all to see. But stopping piracy and full on censorship are very different things.

Texas Roadhouse Cinnamon Sugar Butter and Rolls Copycat Recipe

I could go to Texas Roadhouse and just eat their rolls with their cinnamon sugar butter. Well…maybe I have. But I mean, come one! That BUTTAH is heaven! YUM!

There is no need to embarrass yourself at a public restaurant any longer. Here is a copy cat version that is equally to die for! And if you eat the whole thing in one sitting for dinner, no one will judge you. Except for maybe your husband. But he doesn’t count.

Cinnamon Sugar Butter

Ingredients:
2 sticks of butter – softened, not melted!
1/3 cup sweetened condensed milk – chilled (link leads to a easy homemade version!)
1/2 tsp light corn syrup
1 tsp cinnamon

(So…this isn’t one of those healthy type recipes. You’re getting that, right?)

Place all ingredients in a food processor and blend until mixture is smooth.

We have left it out on the counter for a good two weeks and it was still perfectly good. Stored in the refrigerator it will last even longer, but it does get hard and will need to soften before served.

Rolls (or Bread)

3 cups all-purpose flour
2 (1/4 ounce) packages active dry yeast
1 teaspoon salt
2 tablespoons sugar
1/4 cup nonfat dry milk
1 1/4 cups warm water (105 to 115 degrees F)
1 large egg slightly beaten
8 tablespoons butter melted
2 tablespoons shortening

Place 2 cups flour in a large mixing bowl. Add yeast, salt, sugar and dry milk. Set aside. In a mixing bowl, combine water and egg and stir to blend. Make a well in the center of the dry ingredients. Pour water mixture into the well. Mix by hand, beating 150 strokes and frequently scraping bottom and sides of bowl. Add half of the melted butter and beat to incorporate. Add remaining flour, a little bit at a time, beating to incorporate each addition. Cover bowl with plastic wrap. Set dough in a warm, draft free place.

Allow batter to rise until doubled, about 1 hour. Coat cups, bottoms and sides of 12 cup muffin pan (or two small round pans) with shortening. Punch down batter (batter will be extremely soft and sticky). Drop by hand or spoonful into prepared muffin cups to make 12 rolls (or in pan touching the next). Brush dough with 1/2 remaining melted butter. Let rise uncovered in a warm draft free place until doubled, about 30 minutes. In preheated 400 degree oven, bake rolls on middle rack for 16-18 minutes. Brush tops of baked rolls with remaining melted butter.

This time I baked the dough in mini bread pans and then wrapped them with a little jar of the butter for gifts. And then I…I mean…we ate the rest in 2 seconds flat.

*I did not create this recipe, I have had it for years and honestly do not know where I found it. There seem to be quite a few versions when googled, this is the only one I’ve tried. It’s so delicious I have no need to try others! Thank you to whoever created it. I am eternally indebted to you.

Healthy Meal: Broiled Steak and Zucchini

So it’s January. The month of healthy eating habits! Here is one of my favorite quick and easy meals that I can feel good about eating! Students earning a nutrition degree online
would approve of this quick and healthy meal.

Broiled Steak

Ingredients:
1 boneless sirloin steak
1 medium onion
1 red pepper
1 garlic clove, minced
Salt and Pepper to taste
Olive oil

Cut steak into cubes. Cut onion and pepper into chunks. Drizzle with olive oil. Sprinkle with garlic, salt and pepper. Place steak and veggies in a broiler pan. (If you don’t have one you could put a metal cooling rack over a rimmed cookie sheet. The point is to let the fat drain off.) Broil a few inches from the oven burner for about 10 minutes. Watch carefully!

Broiled Zucchini

Ingredients:
2 medium zucchini, sliced in half lengthwise
1/2 cup shredded mozzarella cheese
2 Tbs diced red pepper (it’s good with diced pimentos too!)
2 Tbs chopped black olives
1 Tbs olive oil

Brush both sides of the zucchini with olive oil. Place on a broiler pan and broil for about 5 minutes.  Sprinkle with cheese, peppers and olives. Put back under broiler until cheese melts. Watch carefully!

I like to make these together because I can put it all in one pan and it cooks within 10 minutes! So quick and easy!

Recipe: Homemade Sweetened Condensed Milk

Sweetened condensed milk is one of those products that you think maybe you have somewhere in the pantry and you go to make something that requires it only to find out that you have evaporated milk (NOT the same thing) or it’s expired or you have none at all! Shew!

This happened to me last week as I made a copycat version of Texas Roadhouse’s cinnamon sugar butter (oh yes, recipe to come soon!) and so I hit The Google to find a substitute or homemade version of some kind. There were a few out there and one of them was a total fail. I finally found this one from good ol’ E-How and it was perfect! Pretty easy and it made about what you would get from a store-bought can!

Homemade Sweetened Condensed Milk

Ingredients:
1 cup powdered milk
1/3 cup boiling water (or more depending on the thickness you want)
2/3 cups sugar
3 tablespoons softened butter

Mix all ingredients together in a blender. Blend on high until the sugar fully dissolves and is smooth. Their version was a little too thick so I did add a little more water.

I used half of it right away and put the rest in the refrigerator. A week later it is still usable but it did get thick so I think you could re-blend it with a bit more of boiling water and it would be perfectly fine!
