Eggnog Spritz Cookies With A Rum Glaze

These cookies taste like eggnog spiked with rum.

I just heard you lick your lips.

Eggnog Spritz Cookies With A Rum Glaze


3/4 cup sugar
1 cup butter, softened
2 tsp vanilla
2tsp rum extract
1 egg
2 1/4 cups flour
1 tsp nutmeg

2 tbs butter, melted
1 cup powdered sugar
1 tsp rum extract
1 tbs water
1/2 tsp nutmeg

To make the cookies:  Beat sugar and butter together until fluffy.  Beat in vanilla, 2 tsp rum extract and egg until smooth.  Beat in flour and 1 tsp nutmeg.

This dough is perfect for a cookie press but you can just roll them into balls and flatten them with fork prongs or smoosh them down with your thumb to make a thumbprint type cookie.

Bake 8-10 minutes.  The key to a good cookie to to very slightly under cook it.  Then let it sit on the hot baking sheet for a minute before you move it to a cooling rack.  The sugar crystallizes while it sits on the hot pan and your cookie will be less likely to crumble!  Let cool before adding the glaze.

Stir all the glaze ingredients together until smooth and thin enough to drizzle.  Drizzle on cookies.  I usually use my cake decorator but you can put it in a plastic baggie and cut off a corner and squeeze it out or just drizzle with a knife all crazy like.  Before glaze is set, sprinkle with nutmeg.

Makes 4-6 dozen, depending on the size of your cookies!
